This really is my favorite breakfast…or late morning snack. My 4 year-old daughter calls chia seeds “Mom’s favorite seeds,” hence the name of this recipe.
2 TBS chia
1 TBS shredded coconut
1 TBS raw pumpkin seeds (optional)
1 TBS sunflower seeds (optional)
1 TBS cashews (optional)
1 cup organic coconut milk
2 TBS raw cream (optional)
1 tsp Prebiotin, or inulin powder
1/2 tsp vanilla
1/4 tsp cardamom
- Place all ingredients in bowl or jar
- Stir or shake until well mixed
- Let sit at least 20 minutes, or even overnight
- Add 1/2 cup blueberries (optional)
Fiber: 15 grams
Beneficial fats: 44 grams
Sugar: 7 grams (with blueberries)
